Early on a Sunday morning I decided it would be a good time to get some meal prep done. Then when time came to it I started to feel lazy so instead I decided to just make some pancakes for the week and some oatmeal chocolate chip cookies!
For the pancakes I just use pancake mix (the add water kind) and mash in 1 overripe banana per cup of mix. So since I made so many I used 2 bananas. I’m careful not to add too many bananas or it will make it hard to cook and it sticks to the pan a lot.
I love cooking them with oil because I like the ends crispy. but hubby prefers butter.
And here is my batch halfway through! Then I decided I wanted to make some cookies while I waited for the rest to cook.
I found the recipe on allrecipes.com and modified it to suit my family’s taste and needs. We try not to have a lot of carbs or sugar on a daily basis to I cut the sugar and the chocolate chip amounts in half.
1 cup butter, softened
1 cup white sugar
2 teaspoons vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon salt
3 cups quick-cooking oats
3/4 cup semisweet chocolate chips
After I mixed the batter I read some reviews that said their cookies came out flat, but I wasn’t concerned because I’m always sure to never over mix (I mix by hand) and I lay my cookies out high like a mountain instead of flat so I’m sure to get soft cookies with even the most basic ingredients.
Here they are 15 minutes after I took them out the oven. Yes, we did eat a few.
These cookies are SO GOOD. I put half of the dough in the freezer instead of baking because I was worried we’d stay there and eat the whole batch. It was a good idea because by the next day all of those cookies were gone!
